Ingredients

  • 2 cups of water
  • 1 package of gelatin or jello mix
  • Fresh fruit (strawberries, blueberries, peaches, etc.)
  • 1 pre-made pie crust (graham cracker or homemade)
  • 8 oz cream cheese or whipped topping
  • Sugar (to taste)

Instructions

  1. Prepare the crust: If using a store-bought crust, press it into a pie dish. For a homemade one, combine crushed graham crackers with melted butter, press into a pie plate, and bake for about 10 minutes until slightly golden. Allow it to cool completely.
  2. Make the jello mixture: In a saucepan, bring 2 cups of water to a boil. Add the gelatin or jello mix, stirring until completely dissolved. Remove from heat and let it cool slightly.
  3. Mix in fruit: Once the jello has cooled but not set, stir in your chosen fruits gently, allowing them to coat each piece evenly.
  4. Layer it all together: Spread a layer of cream cheese or whipped topping on the bottom of your cooled crust. Pour the fruit and jello mixture over it, spreading it evenly.
  5. Chill and set: Refrigerate the pie for at least 240 minutes, or until the jello is firm and set.
  6. Serve and enjoy: Slice into portions and serve chilled, topped with a dollop of whipped cream or fresh mint.

Notes

For a gluten-free option, use a gluten-free pie crust. You can also use frozen fruits if fresh are unavailable.
