Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup almond flour or oat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper or grease it.
  2. Combine the cottage cheese, eggs, honey or maple syrup, and vanilla extract in a bowl and whisk until smooth.
  3. Mix the almond flour, baking powder, and salt in a separate bowl.
  4. Gradually add the dry ingredients to the wet ingredients, folding gently to combine.
  5. Fold in the blueberries carefully to avoid breaking them.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
  8. Cool the bread slightly in the pan before transferring it to a wire rack to cool completely.
  9. Slice and serve warm, optionally drizzled with honey or maple syrup.

Notes

Use fresh blueberries for the best flavor. You can substitute almond flour for oat flour if desired, or use flax eggs for a vegan option.
