Sweet and chewy bites made with shredded coconut, almonds, and rich chocolate, perfect for any occasion.

  • Total Time: 45 minutes
  • Yield: 20 bites

Ingredients

  • 2 cups shredded coconut (unsweetened or sweetened)
  • 1 cup chopped almonds (whole, sliced, or slivered)
  • 14 oz sweetened condensed milk
  • 1 cup chocolate (dark or milk)
  • 2 tbsp butter or coconut oil
  • Pinch of salt

Instructions

  1. Prepare your baking sheet: Line a baking sheet with parchment paper to prevent sticking.
  2. Mix your ingredients: In a mixing bowl, combine shredded coconut, chopped almonds, and sweetened condensed milk until fully incorporated. Scrape down the sides to ensure every morsel gets that delightful blend.
  3. Shape the bites: Use your hands to form small, bite-sized balls, about an inch in diameter.
  4. Chill before coating: Place your formed bites on the prepared baking sheet and refrigerate for at least 30 minutes to firm them up.
  5. Melt the chocolate: In a microwave-safe bowl, melt the chocolate with the butter or coconut oil, stirring frequently.
  6. Dip and coat: Using a fork, dip each coconut bite into the melted chocolate and allow excess to drip off before placing them back on the parchment.
  7. Set and enjoy: Let the chocolate harden at room temperature or refrigerate to speed up the process.

Notes

For a nut-free version, replace almonds with sunflower or pumpkin seeds. For dairy-free, use dairy-free chocolate.
