Ingredients
- 2 cups shredded coconut (unsweetened or sweetened)
- 1 cup chopped almonds (whole, sliced, or slivered)
- 14 oz sweetened condensed milk
- 1 cup chocolate (dark or milk)
- 2 tbsp butter or coconut oil
- Pinch of salt
Instructions
- Prepare your baking sheet: Line a baking sheet with parchment paper to prevent sticking.
- Mix your ingredients: In a mixing bowl, combine shredded coconut, chopped almonds, and sweetened condensed milk until fully incorporated. Scrape down the sides to ensure every morsel gets that delightful blend.
- Shape the bites: Use your hands to form small, bite-sized balls, about an inch in diameter.
- Chill before coating: Place your formed bites on the prepared baking sheet and refrigerate for at least 30 minutes to firm them up.
- Melt the chocolate: In a microwave-safe bowl, melt the chocolate with the butter or coconut oil, stirring frequently.
- Dip and coat: Using a fork, dip each coconut bite into the melted chocolate and allow excess to drip off before placing them back on the parchment.
- Set and enjoy: Let the chocolate harden at room temperature or refrigerate to speed up the process.
Notes
For a nut-free version, replace almonds with sunflower or pumpkin seeds. For dairy-free, use dairy-free chocolate.
