  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

  • 2 cups fresh strawberries, hulled and halved
  • 1 cup whole milk ricotta cheese
  • 2 tablespoons honey (or maple syrup)
  • 1 baguette or artisanal bread
  • 1-2 tablespoons balsamic glaze or vinegar
  • Fresh mint or basil, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and hull the strawberries, then slice them in half.
  3. Toss the strawberries in a bowl with honey and a pinch of salt. Spread them on a parchment-lined baking sheet.
  4. Roast the strawberries for about 15-20 minutes until soft and caramelized.
  5. Combine the ricotta cheese, honey, and a sprinkle of salt in a bowl, whisking until smooth.
  6. Slice your baguette into 1-inch thick pieces and arrange them on a baking sheet; drizzle with olive oil and toast in the oven for 5-10 minutes.
  7. Spread the whipped ricotta onto the toasted bread, top with roasted strawberries, and finish with balsamic glaze and herbs.

Notes

Let the ricotta mixture sit for a few minutes for the best flavor. Serve immediately for optimal texture contrast.
