- 2 cups fresh strawberries, hulled and halved
- 1 cup whole milk ricotta cheese
- 2 tablespoons honey (or maple syrup)
- 1 baguette or artisanal bread
- 1-2 tablespoons balsamic glaze or vinegar

Instructions
- Preheat your oven to 375°F (190°C).
- Wash and hull the strawberries, then slice them in half.
- Toss the strawberries in a bowl with honey and a pinch of salt. Spread them on a parchment-lined baking sheet.
- Roast the strawberries for about 15-20 minutes until soft and caramelized.
- Combine the ricotta cheese, honey, and a sprinkle of salt in a bowl, whisking until smooth.
- Slice your baguette into 1-inch thick pieces and arrange them on a baking sheet; drizzle with olive oil and toast in the oven for 5-10 minutes.
- Spread the whipped ricotta onto the toasted bread, top with roasted strawberries, and finish with balsamic glaze and herbs.
