- 4 ripe peaches, sliced
- 1 cup fresh raspberries
- 3/4 cup granulated sugar (or brown sugar)
- 1 cup all-purpose flour (or whole wheat flour)
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted (or coconut oil)
- 1/2 cup whole milk (or almond/oat milk)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine sliced peaches and raspberries in a large bowl, sprinkle with sugar, and toss gently to coat. Let sit for about 10 minutes.
- Whisk together flour, sugar, baking powder, and salt in another bowl. Pour in the melted butter and milk, stirring until just combined.
- Pour the fruit mixture into a greased baking dish and spread the topping batter over the fruit evenly.
- Bake for 35-40 minutes, until the topping is golden and a toothpick inserted comes out clean.
- Cool for at least 15 minutes before serving, preferably with vanilla ice cream.
Notes
Use fresh fruits for the best flavor and texture. Avoid overmixing the batter for a fluffier topping.
