A delightful summer dessert that combines the sweetness of ripe peaches with the tartness of fresh raspberries, creating a perfect balance of flavors.

  • Total Time: 55 minutes
  • Yield: 8 servings

Ingredients

  • 4 ripe peaches, sliced
  • 1 cup fresh raspberries
  • 3/4 cup granulated sugar (or brown sugar)
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted (or coconut oil)
  • 1/2 cup whole milk (or almond/oat milk)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine sliced peaches and raspberries in a large bowl, sprinkle with sugar, and toss gently to coat. Let sit for about 10 minutes.
  3. Whisk together flour, sugar, baking powder, and salt in another bowl. Pour in the melted butter and milk, stirring until just combined.
  4. Pour the fruit mixture into a greased baking dish and spread the topping batter over the fruit evenly.
  5. Bake for 35-40 minutes, until the topping is golden and a toothpick inserted comes out clean.
  6. Cool for at least 15 minutes before serving, preferably with vanilla ice cream.

Notes

Use fresh fruits for the best flavor and texture. Avoid overmixing the batter for a fluffier topping.
