- 1 teaspoon vanilla extract
- A pinch of salt
- Cinnamon or nutmeg to taste
Instructions
- Combine the rolled oats, milk, and a pinch of salt in a medium saucepan.
- Bring to a gentle simmer over medium heat, stirring frequently.
- Let the oats cook for about 5–7 minutes until fluffy and creamy.
- Whisk together eggs, maple syrup, and vanilla in a separate bowl.
- Pour the egg mixture into the cooked oatmeal while stirring continuously.
- Return the mixture to the stove and cook on low for 2–3 minutes until thickened.
- Add a sprinkle of cinnamon or nutmeg to taste.
- Serve the oatmeal custard in bowls, topped with seasonal fruits or nuts.
Notes
For best texture, ensure constant stirring when combining eggs with warm oats. This dish can also be made the night before and stored in the fridge.
