Ingredients

  • 2 cups Greek yogurt, plain, fat-free or low-fat
  • 8 oz reduced-fat cream cheese
  • 1/2 cup honey or sugar alternative
  • 3 large eggs
  • 1 tsp pure vanilla extract
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 cup graham cracker crumbs
  • 2 tbsp melted butter

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan by greasing it lightly.
  2. Blend the Greek yogurt and cream cheese in a mixing bowl until completely smooth.
  3. Add in your sweetener and mix again until combined.
  4. Beat in the eggs one at a time, ensuring each is well combined before adding the next.
  5. Stir in the vanilla, lemon juice, and zest.
  6. Pour the filling over the prepared crust.
  7. Bake for about 50–60 minutes, until the center is set with a slight jiggle.
  8. Cool at room temperature before refrigerating for at least 4 hours, preferably overnight.
