Ingredients
- 2 cups Greek yogurt, plain, fat-free or low-fat
- 8 oz reduced-fat cream cheese
- 1/2 cup honey or sugar alternative
- 3 large eggs
- 1 tsp pure vanilla extract
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1 cup graham cracker crumbs
- 2 tbsp melted butter
Instructions
- Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan by greasing it lightly.
- Blend the Greek yogurt and cream cheese in a mixing bowl until completely smooth.
- Add in your sweetener and mix again until combined.
- Beat in the eggs one at a time, ensuring each is well combined before adding the next.
- Stir in the vanilla, lemon juice, and zest.
- Pour the filling over the prepared crust.
- Bake for about 50–60 minutes, until the center is set with a slight jiggle.
- Cool at room temperature before refrigerating for at least 4 hours, preferably overnight.
Notes
Allow the cheesecake to set overnight for the best flavor and texture. Serve with fresh berries for an extra treat.
