- 2 cups all-purpose flour
- 1 teaspoon baking powder
- Pinch of salt
- ½ cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 2 tablespoons lemon zest
- ½ cup milk
- 1-1.5 cups fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- Whisk together all-purpose flour, baking powder, and salt in a bowl.
- Cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, and then fold in lemon zest.
- Mix in the dry ingredients alternately with milk, starting and finishing with dry ingredients.
- Gently fold in blueberries.
- Pour the batter into the loaf pan and bake for 55-60 minutes.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
To ensure even baking, use room temperature ingredients. For extra lemon flavor, drizzle a lemon glaze over the top after cooling.
