Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 tablespoons lemon zest
  • ½ cup milk
  • 1-1.5 cups fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Whisk together all-purpose flour, baking powder, and salt in a bowl.
  3. Cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, and then fold in lemon zest.
  5. Mix in the dry ingredients alternately with milk, starting and finishing with dry ingredients.
  6. Gently fold in blueberries.
  7. Pour the batter into the loaf pan and bake for 55-60 minutes.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

To ensure even baking, use room temperature ingredients. For extra lemon flavor, drizzle a lemon glaze over the top after cooling.
