Delicate shortbread cookies infused with floral notes, perfect for springtime celebrations.

  • Total Time: 30 minutes
  • Yield: 24 cookies

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1/4 cup edible flowers (lavender, chamomile, or pansies)
  • 1 teaspoon vanilla extract

Instructions

  1. Gather your ingredients: Ensure everything is at room temperature for easier mixing.
  2. Prep your oven: Preheat your oven to 350°F (175°C), and line a baking sheet with parchment paper.
  3. Make the dough: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the flours: Gradually mix in the all-purpose and powdered sugar until fully combined.
  5. Flavor it up: Gently fold in your edible flowers and vanilla extract.
  6. Shape and chill: Roll the dough into a log shape, wrap it in plastic wrap, and chill for at least an hour.
  7. Slice and bake: Once chilled, slice the log into approximately 1/4-inch thick rounds and arrange them on the lined baking sheet.
  8. Bake for about 12-15 minutes or until the edges turn golden brown.
  9. Cool down: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  10. Finish: Drizzle with icing made from powdered sugar and milk, and optionally, add extra flower petals on top.

Notes

Ensure you use edible flowers that are safe for consumption, and feel free to customize the recipe with lemon zest or a sprinkle of sea salt.
