Ingredients
- 1 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 1/2 cups crushed graham crackers
- 2 cups mini marshmallows
- 1 vanilla bean, seeds scraped
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
- Melt the butter in a large bowl and whisk in the cocoa powder until smooth. Add both sugars and mix well.
- Incorporate eggs one at a time, whisking until glossy and thick. Stir in the vanilla extract.
- Fold in the flour and a pinch of salt until just combined. Gently fold in chocolate chips.
- Combine crushed graham crackers with melted butter in a separate bowl and press into the bottom of the prepared pan.
- Pour the brownie batter over the crust and bake for about 25-30 minutes, until a toothpick comes out with a few moist crumbs.
- Prepare mini marshmallows with vanilla bean seeds while brownies bake.
- Sprinkle marshmallows over warm brownies and return to the oven for an additional 5 minutes.
- Cool in the pan on a wire rack, then lift out using parchment and cut into squares.
Notes
For best texture, do not overmix batter and ensure brownies remain slightly gooey in the center. Top with a kitchen torch for toasted marshmallows.
