Decadent brownies layered with a fluffy vanilla bean marshmallow topping and a crispy graham cracker crust, inspired by the classic campfire treat.

Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups crushed graham crackers
  • 2 cups mini marshmallows
  • 1 vanilla bean, seeds scraped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. Melt the butter in a large bowl and whisk in the cocoa powder until smooth. Add both sugars and mix well.
  3. Incorporate eggs one at a time, whisking until glossy and thick. Stir in the vanilla extract.
  4. Fold in the flour and a pinch of salt until just combined. Gently fold in chocolate chips.
  5. Combine crushed graham crackers with melted butter in a separate bowl and press into the bottom of the prepared pan.
  6. Pour the brownie batter over the crust and bake for about 25-30 minutes, until a toothpick comes out with a few moist crumbs.
  7. Prepare mini marshmallows with vanilla bean seeds while brownies bake.
  8. Sprinkle marshmallows over warm brownies and return to the oven for an additional 5 minutes.
  9. Cool in the pan on a wire rack, then lift out using parchment and cut into squares.

Notes

For best texture, do not overmix batter and ensure brownies remain slightly gooey in the center. Top with a kitchen torch for toasted marshmallows.
