Ingredients

  • 2 medium-sized fresh beets
  • 2 cups fresh baby carrots
  • 1 ball of burrata cheese
  • 3 tablespoons extra virgin olive oil

  • Balsamic glaze or lemon vinaigrette for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the beets and cut them into bite-sized pieces.
  3. Clean the carrots and cut them into even pieces.
  4. Toss the beets and carrots in olive oil, salt, and pepper until coated.
  5. Spread the veggies out on a baking sheet in a single layer.
  6. Roast for approximately 30-35 minutes, stirring halfway through.
  7. Prepare the burrata by letting it come to room temperature.
  8. Once the veggies are done, allow them to cool slightly and place them on a platter.
  9. Top with burrata and garnish with fresh herbs.
  10. Drizzle with balsamic glaze or lemon vinaigrette.
