Ingredients
- 2 medium-sized fresh beets
- 2 cups fresh baby carrots
- 1 ball of burrata cheese
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Fresh herbs (basil or parsley)
- Balsamic glaze or lemon vinaigrette for drizzling
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the beets and cut them into bite-sized pieces.
- Clean the carrots and cut them into even pieces.
- Toss the beets and carrots in olive oil, salt, and pepper until coated.
- Spread the veggies out on a baking sheet in a single layer.
- Roast for approximately 30-35 minutes, stirring halfway through.
- Prepare the burrata by letting it come to room temperature.
- Once the veggies are done, allow them to cool slightly and place them on a platter.
- Top with burrata and garnish with fresh herbs.
- Drizzle with balsamic glaze or lemon vinaigrette.
- Serve immediately.
Notes
Make sure to let the burrata come to room temperature for the best texture. Avoid overcrowding the baking sheet for even roasting.
