Ingredients

  • 1 pound boneless chicken thighs or breasts
  • 1 pound fresh or store-bought gnocchi
  • 2 fresh lemons (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish

Instructions

  1. Prep your ingredients: Slice your chicken into bite-sized pieces. Clean and slice mushrooms and pre-wash the spinach.
  2. Sauté the chicken: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the chicken pieces, seasoning with salt and pepper. Sauté until golden brown and cooked through, about 5–7 minutes. Remove the chicken from the pan and set aside.
  3. Cook the vegetables: In the same pan, add a bit more olive oil if needed, and toss in the sliced mushrooms. Sauté until they soften, around 3–4 minutes. Add minced garlic and continue cooking for another minute until fragrant.
  4. Add gnocchi and simmer: Stir in the gnocchi and cook them until they start to brown slightly, about 2–3 minutes. Pour in the chicken broth and zest of one lemon, bringing everything to a gentle simmer.
  5. Combine and finish: Once the gnocchi has absorbed some broth, add the cooked chicken back to the pan along with the lemon juice and spinach. Stir until the spinach wilts and everything is well combined. Season with additional salt, pepper, and a sprinkle of fresh herbs.
  6. Serve hot: Garnish with more lemon zest and fresh herbs. Serve this comforting dish warm, and watch smiles spread all around your table.
