Ingredients
- 1 lb ground meat (lamb, beef, or turkey)
- 2 cloves fresh garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup breadcrumbs (or gluten-free option)
- 1 egg
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 1 tbsp lemon juice
- 1 tsp dill, chopped
- Salt and pepper, to taste
- 1 cup quinoa or rice (for serving)
- Fresh veggies for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Mix the ground meat, crushed garlic, chopped herbs, breadcrumbs, and egg in a large bowl.
- Shape the mixture into balls about the size of a golf ball and place them on a parchment-lined baking sheet.
- Bake for 20-25 minutes until golden brown and cooked through.
- Prepare the tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and seasoning in a bowl.
- Assemble your bowls with grains or greens, meatballs, and drizzle with tzatziki. Garnish with herbs or feta if desired.

Notes
For a leaner option, substitute turkey for lamb. Use gluten-free grains to make it gluten-free.
