Ingredients
- 1 lb boneless, skinless chicken (breast or thighs)
- 4 tablespoons unsalted butter
- 1/4 cup fresh lemon juice
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup fresh parsley or thyme, chopped
- Salt and pepper to taste
Instructions
- Prep the chicken: Season with salt and pepper.
- Sear the chicken in a large skillet over medium-high heat with 2 tablespoons of butter for 5-7 minutes on each side until golden brown. Remove and set aside.
- Make the sauce: In the same skillet, add the remaining butter and sauté the minced garlic for about 1 minute.
- Add chicken broth and lemon juice, scraping any brown bits from the pan. Let it simmer.
- Stir in the heavy cream and reduce heat to low until slightly thickened.
- Return the seared chicken to the skillet, spooning the sauce over it.
- Finish with fresh herbs and adjust seasoning. Cook for a few more minutes.
- Serve the chicken on a plate, drizzling more sauce on top.
Notes
For oven-cooked chicken, you can bake at 375°F for 25-30 minutes until done. Serve immediately for best flavor.
