Ingredients

  • 1 lb boneless, skinless chicken (breast or thighs)
  • 4 tablespoons unsalted butter
  • 1/4 cup fresh lemon juice
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup fresh parsley or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Prep the chicken: Season with salt and pepper.
  2. Sear the chicken in a large skillet over medium-high heat with 2 tablespoons of butter for 5-7 minutes on each side until golden brown. Remove and set aside.
  3. Make the sauce: In the same skillet, add the remaining butter and sauté the minced garlic for about 1 minute.
  4. Add chicken broth and lemon juice, scraping any brown bits from the pan. Let it simmer.
  5. Stir in the heavy cream and reduce heat to low until slightly thickened.
  6. Return the seared chicken to the skillet, spooning the sauce over it.
  7. Finish with fresh herbs and adjust seasoning. Cook for a few more minutes.
  8. Serve the chicken on a plate, drizzling more sauce on top.

Notes

For oven-cooked chicken, you can bake at 375°F for 25-30 minutes until done. Serve immediately for best flavor.
