A delightful dessert combining rich, flaky shortcake with sweet, ripe strawberries and whipped cream.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup milk or heavy cream
  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon sugar (for strawberries)
  • 1 cup heavy cream (for whipping)
  • 2 tablespoons sugar (for whipped cream)
  • Slap of vanilla extract (optional)

Instructions

  1. Prepare the strawberries: Wash and hull strawberries, slice, and sprinkle with sugar. Let sit for 30 minutes.
  2. Make the shortcake: Preheat oven to 425°F (220°C). Whisk flour, baking powder, and sugar. Cut in butter until coarse crumbs form.
  3. Mix wet ingredients: Combine milk or cream and add to dry mixture, stirring until just combined.
  4. Shape and bake: Pat dough to 1-inch thickness, cut into rounds, and bake for 15-20 minutes until golden.
  5. Whip the cream: Whip heavy cream with sugar and vanilla until soft peaks form.
  6. Assemble: Slice shortcakes, layer with strawberries and whipped cream, and cap with top half.
  7. Serve and enjoy: Serve immediately with extra strawberries and whipped cream.

Notes

Ensure butter is cold for maximum flakiness. Don’t overmix the dough to avoid tough shortcakes.
