Ingredients
- 2 lbs Beef Chuck Roast
- 4 large Onions, thinly sliced
- 8 oz Fresh Cremini Mushrooms, sliced
- 2 cups Beef Broth
- 2 tsp Dried Thyme
- Salt and Pepper to taste
- 2 Bay Leaves
- 2 tbsp Cooking Oil or Butter
- 1/2 cup Red Wine (optional)
Instructions
- Sauté the onions: Melt butter or heat oil in a skillet, add onions, and cook until golden brown, about 25-30 minutes.
- Brown the beef: Season the roast with salt and pepper and sear in the same skillet until browned on all sides.
- Layer in the slow cooker: Transfer the roast, top with sautéed onions, garlic, mushrooms, broth, and wine. Add thyme and bay leaves.
- Cook low and slow: Cover and cook on low for 8 hours or high for 4-5 hours until fork-tender.
- Finish and serve: Remove the roast, let rest, then slice. Serve with mashed potatoes or crusty bread.
Notes
For thick gravy, reduce the cooking liquid in a saucepan until thickened. Optionally whisk in a cornstarch slurry.
