Ingredients
- 1 chuck roast
- 4 cups low-sodium beef broth
- 2 sweet onions, thinly sliced
- 4 cloves garlic, minced
- 2 teaspoons dried thyme
- 2 bay leaves
- 2 teaspoons dried rosemary
- 1 tablespoon Worcestershire sauce
- 4 French baguettes or hoagie rolls
- 4 slices provolone or Swiss cheese
Instructions
- Season the chuck roast generously with salt and pepper. Sear it in a hot skillet until all sides develop a lovely crust.
- Transfer the roast to the slow cooker. Add in thinly sliced onions, minced garlic, and all the herbs.
- Pour the beef broth over the roast, followed by Worcestershire sauce.
- Set your slow cooker on low and let it cook for 8 hours.
- Shred the beef right in the cooker with two forks.
- Toast the rolls lightly, fill each with shredded beef, and top with cheese before broiling briefly until melted.
- Prepare individual bowls of au jus for dipping.
