Ingredients

  • 8 oz fettuccine, linguine, or spaghetti
  • 8 oz cremini, button, or shiitake mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 tbsp unsalted butter (or olive oil)
  • 1 cup heavy cream (or half and half)
  • 1/2 cup freshly grated Parmesan cheese (or nutritional yeast)
  • Fresh parsley or thyme, chopped
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta: Boil salted water and cook the pasta until al dente. Reserve 1 cup of pasta water before draining.
  2. Sauté the Garlic and Mushrooms: Melt butter in a skillet over medium heat. Add garlic and sauté until fragrant, then add mushrooms and cook until tender.
  3. Make the Sauce: Lower heat and stir in heavy cream. Add reserved pasta water as needed to loosen the sauce.
  4. Combine and Serve: Add drained pasta to the skillet, toss to coat with sauce, and stir in Parmesan cheese and herbs.
  5. Garnish and Enjoy: Serve immediately, garnished with extra herbs and cheese if desired.

Notes

Feel free to substitute ingredients based on availability. For a lighter option, use olive oil instead of butter and vegetable broth in place of heavy cream.
