Ingredients

  • 1 lb Boneless chicken (breasts or thighs)
  • 4 Fresh tomatoes, diced
  • 3 cloves Garlic, minced
  • 1/4 cup Fresh basil, chopped
  • 1 cup Mozzarella cheese, shredded
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the chicken in a skillet over medium heat with olive oil, seasoning with salt and pepper until golden brown, about 7-10 minutes.
  3. Prepare the bruschetta topping by combining diced tomatoes, minced garlic, basil, and a splash of olive oil in a bowl.
  4. Layer the cooked chicken in a greased 9×13-inch baking dish, spread the bruschetta mixture on top, and sprinkle mozzarella cheese.
  5. Bake for 25-30 minutes until cheese is melted and bubbly; broil for an additional 2-3 minutes for a crispy top.
  6. Cool for 10 minutes before serving.
