Ingredients
- 1 lb Boneless chicken (breasts or thighs)
- 4 Fresh tomatoes, diced
- 3 cloves Garlic, minced
- 1/4 cup Fresh basil, chopped
- 1 cup Mozzarella cheese, shredded
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
- 1 tsp Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the chicken in a skillet over medium heat with olive oil, seasoning with salt and pepper until golden brown, about 7-10 minutes.
- Prepare the bruschetta topping by combining diced tomatoes, minced garlic, basil, and a splash of olive oil in a bowl.
- Layer the cooked chicken in a greased 9×13-inch baking dish, spread the bruschetta mixture on top, and sprinkle mozzarella cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly; broil for an additional 2-3 minutes for a crispy top.
- Cool for 10 minutes before serving.
Notes
Always use fresh ingredients for the best flavor. Letting the casserole cool slightly helps it hold its shape.
