Ingredients
- 2 lbs boneless chicken (breast or thighs)
- 1/2 cup soy sauce
- 1/4 cup mirin
- 1/4 cup brown sugar
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- Vegetables (bell peppers, zucchini, onion, or pineapple)
Instructions
- Marinate the chicken: In a mixing bowl, combine soy sauce, mirin, brown sugar, minced garlic, and grated ginger. Cut the chicken into bite-sized chunks and add it to the marinade. Let it rest in the refrigerator for at least 30 minutes.
- Prepare your skewers: If using wooden skewers, soak them in water for about 30 minutes. For metal skewers, rinse them clean.
- Assemble the skewers: Once marinated, thread the chicken onto the skewers, alternating with your choice of vegetables.
- Grill: Preheat the grill to medium-high. Grill the skewers for about 10-15 minutes, turning occasionally until cooked through.
- Serve and enjoy: Let the skewers rest for a couple of minutes before serving. Garnish with sesame seeds or sliced green onions.
Notes
For added flavor, brush extra marinade onto the skewers while grilling. Don’t forget to soak wooden skewers to prevent burning.
