Ingredients
- 4 boneless chicken breasts
- 1/4 cup honey
- 1/4 cup freshly squeezed lime juice
- 3 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 ripe avocados, diced
- 2 cups long-grain rice
- 1/4 cup fresh cilantro, chopped
Instructions
- Marinate the chicken: In a bowl, whisk together honey, lime juice, minced garlic, olive oil, salt, and pepper. Add the chicken and allow it to marinate for at least 30 minutes.
- Prepare the rice: Cook rice according to package instructions. For added flavor, add a pinch of salt and a squeeze of lime juice to the water. Once cooked, fold in diced avocado and chopped cilantro.
- Cook the chicken: Preheat your grill or skillet over medium heat. Grill the marinated chicken for 6-8 minutes per side, ensuring it reaches an internal temperature of 165°F.
- Serve: Arrange the avocado rice on a platter, slice the chicken on top, and garnish with lime wedges and cilantro.
- Enjoy: Sit down with loved ones and savor each bite together.
Notes
Feel free to substitute chicken with boneless salmon for a seafood twist or use agave syrup instead of honey for a vegan option.
