Ingredients

  • 1 cup Lime Juice and Zest
  • 1 can (14 oz) Sweetened Condensed Milk
  • 1 cup Heavy Whipping Cream
  • 1 ½ cups Graham Crackers or Maria Cookies, crushed
  • 2 Eggs (optional, or substitute with extra heavy cream)
  • ½ cup Sugar
  • Melted Butter (for the crust)

Instructions

  1. Prepare the Base: Crush the graham crackers or cookies into fine crumbs and mix with melted butter. Press firmly into a 9-inch springform pan.
  2. Mix the Filling: In a bowl, combine sweetened condensed milk, lime juice, and zest. Whisk until smooth.
  3. Whip the Cream: Whip the heavy cream in a separate bowl until stiff peaks form. Gently fold it into the lime mixture.
  4. Assemble the Dessert: Pour half of the lime mixture over the crust, layer with crushed cookies, then repeat with remaining mixture and top with cookie crumbs.
  5. Chill: Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  6. Serve: Remove sides of the springform pan, slice and garnish with lime slices or berries if desired.
