Ingredients

  • 1 head of cabbage (green or purple), chopped
  • 1 cup bell peppers (mixed colors), diced
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 inch fresh ginger, minced
  • 2 tablespoons olive or coconut oil
  • 1 teaspoon allspice or thyme
  • Salt and black pepper, to taste
  • 1 tablespoon vinegar (optional)

Instructions

  1. Prepare your ingredients. Chop the cabbage into bite-sized pieces, dice the peppers, and finely mince the garlic and ginger. Slice the onion thinly.
  2. Heat the oil in a skillet over medium heat.
  3. Sauté the aromatics. Add the sliced onion, garlic, and ginger to the heated oil, cooking for about 3 minutes until fragrant.
  4. Add the cabbage and peppers. Toss in the chopped cabbage, bell peppers, and season with salt, black pepper, and spices. Mix well and cook for about 5-7 minutes.
  5. Finish with a splash of vinegar. Toss everything together and let it cook for another minute or two.
  6. Serve warm and enjoy!

Notes

For added texture, consider tossing in some carrots or snap peas. Avoid overcrowding the pan to ensure the cabbage sautés properly.
