Ingredients
- 1 head of cabbage (green or purple), chopped
- 1 cup bell peppers (mixed colors), diced
- 2 cloves garlic, minced
- 1 onion, thinly sliced
- 1 inch fresh ginger, minced
- 2 tablespoons olive or coconut oil
- 1 teaspoon allspice or thyme
- Salt and black pepper, to taste
- 1 tablespoon vinegar (optional)
Instructions
- Prepare your ingredients. Chop the cabbage into bite-sized pieces, dice the peppers, and finely mince the garlic and ginger. Slice the onion thinly.
- Heat the oil in a skillet over medium heat.
- Sauté the aromatics. Add the sliced onion, garlic, and ginger to the heated oil, cooking for about 3 minutes until fragrant.
- Add the cabbage and peppers. Toss in the chopped cabbage, bell peppers, and season with salt, black pepper, and spices. Mix well and cook for about 5-7 minutes.
- Finish with a splash of vinegar. Toss everything together and let it cook for another minute or two.
- Serve warm and enjoy!
Notes
For added texture, consider tossing in some carrots or snap peas. Avoid overcrowding the pan to ensure the cabbage sautés properly.
