Ingredients

  • 2 cups boneless chicken (breast or thighs)
  • 2 large yellow or sweet onions
  • 1 cup orzo pasta

  • 1 cup Gruyère or mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large casserole dish.
  2. Caramelize the onions: Heat a large skillet over medium heat, add olive oil and butter, and toss in sliced onions with a sprinkle of salt. Cook low and slow for about 25-30 minutes until golden.
