Ingredients
- 4 ears of fresh corn (grilled or boiled)
- 1 cup mayonnaise or crema
- Juice of 1-2 limes
- 1 cup crumbled cotija cheese
- 1/2 cup fresh cilantro, chopped
- 1 teaspoon chili powder or paprika
- Salt and pepper to taste
Instructions
- Prepare your corn: Grill over medium heat until charred, about 10 minutes, or boil for 5-7 minutes. Cool and cut off kernels.
- Mix the salad: In a bowl, combine corn with mayo or crema. Add lime juice.
- Incorporate cheese and seasoning: Add cotija cheese, cilantro, chili powder or paprika, and season with salt and pepper. Fold together.
- Chill and serve: Refrigerate for at least 30 minutes before serving.
Notes
Adjust lime juice and cheese to taste. For a lighter version, substitute mayo with Greek yogurt.
