Instructions
- Prepare the batter: In a large bowl, whisk together the cottage cheese, eggs, lemon juice, and zest until smooth.
- Mix the dry ingredients: In another bowl, combine the flour, baking powder, salt, and sweetener.
- Combine the mixtures: Gradually add the dry mixture to the wet mixture, stirring gently.
- Add blueberries: Gently fold in the blueberries.
- Heat the skillet: Preheat a non-stick skillet over medium heat and add butter or oil.
- Cook: Scoop the batter onto the skillet and cook until bubbles form (about 2-3 minutes). Flip and cook for another 2 minutes until golden brown.
- Serve: Transfer pancake bites to a plate and serve warm with powdered sugar or syrup.
Notes
For fluffier pancake bites, let the batter rest for 5-10 minutes before cooking. Avoid over-mixing the batter to keep them tender.
