- 1 pound low-moisture mozzarella cheese
- 2 large eggs
- 1 cup plain or seasoned breadcrumbs
- 1/2 cup all-purpose flour
- Salt and pepper to taste

Instructions
- Prepare the cheese: Cut the mozzarella into sticks about 3 inches long and ½ inch thick. Place them in the freezer for about 30 minutes.
- Set up breading stations: In one bowl, mix flour with salt and pepper. In a second bowl, whisk the eggs. In a third bowl, add breadcrumbs.
- Bread the sticks: Coat each cheese stick in flour, then dip in egg, and roll in breadcrumbs. Repeat the egg and breadcrumb steps for extra crunch.
- Chill again: Place the breaded sticks on a baking sheet and chill in the refrigerator for another 30 minutes.
- Heat the oil: Heat the oil in a heavy skillet or deep fryer over medium-high heat until shimmering.
- Fry the sticks: Carefully add a few sticks at a time, frying until golden brown, about 2-3 minutes per side. Drain on paper towels.
- Serve warm: Enjoy with your favorite dipping sauce immediately!
