Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the spinach by washing thoroughly and chopping finely.
- Combine cottage cheese, chopped spinach, herbs, minced garlic, salt, and pepper in a bowl. Mix well.
- Slowly add flour and baking powder to the mixture, stirring gently.
- Knead the dough on a floured surface until smooth, about 1-2 minutes.
- Divide the dough into equal portions and shape into bagel-like rings.
- Bake for 20-25 minutes until golden brown.
- Allow to cool slightly before enjoying, drizzled with olive oil or spread with cream cheese.
Notes
For a glossy finish, brush with an egg wash before baking. You can substitute ingredients as needed, like using kale instead of spinach or ricotta instead of cottage cheese.
