A comforting and simple casserole featuring tender chicken, fresh zucchini, and melted cheese, perfect for busy weeknights.

Ingredients

  • 2 cups boneless chicken (breast or thighs), diced
  • 2 medium zucchinis, sliced
  • 1 cup cheese (cheddar or mozzarella), shredded
  • 1 cup mushrooms (white or cremini), chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme or basil
  • 1 cup cream or broth
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Add olive oil in a large skillet over medium heat, and sauté garlic until fragrant.
  3. Stir in chopped mushrooms and cook until tender.
  4. Add sliced zucchini, season with salt and pepper, and cook for another 3-5 minutes.
  5. Combine cooked chicken, sautéed veggies, spices, and half of the cheese in a large bowl.
  6. Transfer the mixture to the baking dish and top with remaining cheese.
  7. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes.
  8. Allow to rest before serving.
