Ingredients
- 2 cups boneless chicken (breast or thighs), diced
- 2 medium zucchinis, sliced
- 1 cup cheese (cheddar or mozzarella), shredded
- 1 cup mushrooms (white or cremini), chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme or basil
- 1 cup cream or broth
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Add olive oil in a large skillet over medium heat, and sauté garlic until fragrant.
- Stir in chopped mushrooms and cook until tender.
- Add sliced zucchini, season with salt and pepper, and cook for another 3-5 minutes.
- Combine cooked chicken, sautéed veggies, spices, and half of the cheese in a large bowl.
- Transfer the mixture to the baking dish and top with remaining cheese.
- Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes.
- Allow to rest before serving.

Feel free to customize with additional vegetables or spices based on what you have on hand.
