Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 ripe mango, diced
- 1/2 cup fresh cilantro, chopped
- Juice of 2 limes
- 1 tsp chili powder
- 1 cup bell peppers, diced
- 1/2 cup red onion, diced
- 1 cup corn (fresh or canned)
- 2 tbsp olive oil
Instructions
- Prepare the ingredients: Peel and devein the shrimp, dice the avocado and mango, and chop the cilantro and vegetables.
- Make the mango salsa: Combine diced mango, chopped cilantro, lime juice, and a pinch of salt in a bowl. Stir gently.
- Cook the shrimp: Heat olive oil in a skillet. Add shrimp, chili powder, salt, and pepper. Sauté for 3-4 minutes until shrimp turns pink.
- Assemble the bowl: Layer shredded lettuce (if using), sautéed shrimp, diced avocado, and mango salsa in a serving bowl.
- Drizzle with lime-chili sauce: Whisk lime juice, chili sauce, and honey and drizzle over the bowl.
- Serve and enjoy: Share the dish with friends and family, savoring the tropical flavors.
Notes
For substitutes, use grilled chicken or tofu instead of shrimp. Pineapple can replace mango, and parsley can substitute cilantro.
