Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 ripe mango, diced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tsp chili powder
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, diced
  • 1 cup corn (fresh or canned)
  • 2 tbsp olive oil

Instructions

  1. Prepare the ingredients: Peel and devein the shrimp, dice the avocado and mango, and chop the cilantro and vegetables.
  2. Make the mango salsa: Combine diced mango, chopped cilantro, lime juice, and a pinch of salt in a bowl. Stir gently.
  3. Cook the shrimp: Heat olive oil in a skillet. Add shrimp, chili powder, salt, and pepper. Sauté for 3-4 minutes until shrimp turns pink.
  4. Assemble the bowl: Layer shredded lettuce (if using), sautéed shrimp, diced avocado, and mango salsa in a serving bowl.

Notes

For substitutes, use grilled chicken or tofu instead of shrimp. Pineapple can replace mango, and parsley can substitute cilantro.
