Ingredients
- 3 medium Zucchini, sliced
- 1 Sweet Onion, chopped
- 1 Red Bell Pepper, chopped
- 1 Green Bell Pepper, chopped
- 2 cloves Garlic, minced
- 1 cup Cremini or Portobello Mushrooms, sliced
- 1 cup Parmesan or Mozzarella Cheese, shredded
- 3 large Eggs
- 1 tablespoon Fresh Thyme or Dill
- Salt and pepper, to taste
- 2 tablespoons Olive Oil
Instructions
- Preheat your oven to 375°F (190°C). Slice the zucchini, chop the onions and bell peppers, and mince the garlic. Set aside.
- Heat olive oil over medium heat in a large skillet. Add the onions and sauté until translucent, about 3-4 minutes. Add garlic and mushrooms, cooking until softened. Finally, toss in the zucchini and bell peppers, seasoning with salt and pepper. Cook until the vegetables are just tender.
- Beat the eggs in a large bowl and add your sautéed veggies, cheese, and herbs. Mix until well incorporated.
- Grease a baking dish and pour the mixture in evenly, optionally sprinkling additional cheese on top.
- Cover with aluminum foil and bake for approximately 30 minutes. Remove the foil and bake for an additional 15 minutes until golden brown.
- Let it cool for a few minutes, then cut into squares and serve warm, garnished with extra herbs if desired.
Notes
Tip: To avoid excess moisture, salt the sliced zucchini and let it sit for 15-20 minutes before using.
