A wholesome and delightful zucchini veggie bake, perfect for family gatherings and a healthy weeknight dinner.

Ingredients

  • 3 medium Zucchini, sliced
  • 1 Sweet Onion, chopped
  • 1 Red Bell Pepper, chopped
  • 1 Green Bell Pepper, chopped
  • 2 cloves Garlic, minced
  • 1 cup Cremini or Portobello Mushrooms, sliced
  • 1 cup Parmesan or Mozzarella Cheese, shredded
  • 3 large Eggs
  • 1 tablespoon Fresh Thyme or Dill
  • Salt and pepper, to taste
  • 2 tablespoons Olive Oil

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the zucchini, chop the onions and bell peppers, and mince the garlic. Set aside.
  2. Heat olive oil over medium heat in a large skillet. Add the onions and sauté until translucent, about 3-4 minutes. Add garlic and mushrooms, cooking until softened. Finally, toss in the zucchini and bell peppers, seasoning with salt and pepper. Cook until the vegetables are just tender.
  3. Beat the eggs in a large bowl and add your sautéed veggies, cheese, and herbs. Mix until well incorporated.
  4. Grease a baking dish and pour the mixture in evenly, optionally sprinkling additional cheese on top.
  5. Cover with aluminum foil and bake for approximately 30 minutes. Remove the foil and bake for an additional 15 minutes until golden brown.
  6. Let it cool for a few minutes, then cut into squares and serve warm, garnished with extra herbs if desired.

Notes

Tip: To avoid excess moisture, salt the sliced zucchini and let it sit for 15-20 minutes before using.
