Ingredients

  • 4 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 1/2 cups warm water
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1/2 cup fresh rosemary, chopped
  • 1/2 cup fresh thyme, chopped
  • 1/2 cup fresh oregano, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated

Instructions

  1. Proof the yeast: In a mixing bowl, combine warm water, yeast, and a pinch of sugar. Allow it to sit until it froths, about 5–10 minutes.
  2. Mix the dry ingredients: In a separate bowl, whisk together flour and salt.
  3. Combine wet and dry ingredients: Slowly add the frothy yeast mixture and olive oil to the flour, stirring until it forms a shaggy dough.
  4. Incorporate cheese and herbs: Fold in your cheese and herbs until evenly distributed throughout the dough.
  5. Knead the dough: Transfer the dough to a floured surface and knead for about 8–10 minutes until smooth and elastic.
  6. Let it rise: Place the dough in a greased bowl, cover it with a towel, and allow it to double in size, typically an hour.
  7. Shape the loaf: Punch down the risen dough, then shape it into a loaf or desired form. Transfer it to a greased baking pan.
  8. Second rise: Cover the shaped dough and let it rest for another 30 minutes while preheating your oven to 375°F (190°C).
