Ingredients
- Chicken thighs or breasts
- Honey BBQ Sauce
- New potatoes or baby Yukon Golds
- Fresh garlic
- Grated parmesan cheese
- Butter or olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the chicken by trimming excess fat and coating with honey BBQ sauce.
- Place the coated chicken in a large baking dish or a sheet pan lined with parchment paper.
- Scrub the potatoes clean and cut them into halves or quarters.
- Toss the potatoes with melted butter, minced garlic, and a sprinkle of parmesan. Season with salt and pepper.
- Arrange the potatoes around the chicken in the baking dish, adding extra parmesan if desired.
- Bake in the oven for 30-35 minutes until the chicken is cooked through and the potatoes are golden.
- Broil for 2-3 minutes for a charred finish.
- Remove from the oven and let rest for a couple of minutes.
- Serve and enjoy!
Notes
Allowing the chicken to marinate in BBQ sauce before cooking enhances the flavor. Fresh ingredients will yield the best results.
