Ingredients
- 1 pound chicken breasts or thighs, boneless
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 2 cloves fresh garlic, minced
- Fresh herbs (like rosemary or thyme)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the marinade: combine honey, Dijon mustard, olive oil, minced garlic, salt, and pepper in a bowl.
- Prepare the chicken by placing it in a baking dish and pouring half of the marinade over the chicken.
- Bake covered with aluminum foil for 25 minutes.
- Baste with reserved marinade, uncover, and return to the oven for 10-15 minutes until cooked through.
- Rest the chicken for 5 minutes before slicing and serving.
Notes
For added flavor, let the chicken marinate for at least 30 minutes or overnight. Serve with roasted vegetables or a fresh salad.
