Ingredients
- Flour or corn tortillas
- 2 cups fresh spinach
- 1 cup mushrooms (cremini or button), sliced
- 2 cloves garlic, minced
- 1 cup mozzarella cheese, shredded
- 1 cup cheddar cheese, shredded
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional spices: cumin, paprika, cayenne
Instructions
- Preheat your oven to 425°F (220°C).
- Sauté the garlic and mushrooms with olive oil over medium heat for 5-7 minutes, then add spinach and cook until wilted.
- Assemble the quesadillas by layering cheese, the spinach and mushroom mixture, and more cheese between tortillas.
- Bake on a lined baking sheet for 15-20 minutes, flipping halfway, until golden brown.
- Serve with salsa, guacamole, or sour cream.
Notes
Allow the sautéed filling to cool slightly before assembling to prevent sogginess. Use gloves for neat assembly.
