Ingredients

  • Flour or corn tortillas
  • 2 cups fresh spinach
  • 1 cup mushrooms (cremini or button), sliced
  • 2 cloves garlic, minced
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional spices: cumin, paprika, cayenne

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Sauté the garlic and mushrooms with olive oil over medium heat for 5-7 minutes, then add spinach and cook until wilted.
  3. Assemble the quesadillas by layering cheese, the spinach and mushroom mixture, and more cheese between tortillas.
  4. Bake on a lined baking sheet for 15-20 minutes, flipping halfway, until golden brown.
  5. Serve with salsa, guacamole, or sour cream.

Notes
