Ingredients

  • 1 medium Cabbage, shredded
  • 1 medium Onion, diced
  • 1 cup All-purpose flour (or chickpea flour for gluten-free)
  • 2 large Eggs
  • Salt, to taste
  • Pepper, to taste
  • Oil, for frying

Instructions

  1. Prepare the Cabbage: Shred the cabbage finely and sprinkle with a little salt. Let it sit for about 10-15 minutes to draw out excess moisture.
  2. Sauté the Onions: In a skillet over medium heat, add a splash of oil and sauté the finely diced onion until it becomes translucent and fragrant, about 5 minutes.
  3. Combine Ingredients: In a mixing bowl, combine the drained cabbage, sautéed onions, flour, and eggs. Mix until all the ingredients are well incorporated. The batter should be thick but moist.
  4. Heat the Oil: In the same skillet, heat enough oil to cook the fritters—about 1 inch deep—over medium heat.
  5. Fry the Fritters: Once the oil is hot, spoon tablespoons of the batter into the skillet, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side or until golden brown.
  6. Drain and Serve: Use a slotted spoon to remove the fritters and place them on a plate lined with paper towels to absorb excess oil. Serve warm, perhaps with a dollop of sour cream or applesauce on the side.

Notes

Make sure your oil is hot enough before adding the fritters to prevent them from becoming greasy. Fry in smaller batches for best results.
