Chicken Scampi with Garlic Parmesan Rice

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 4 cloves fresh garlic, minced
  • 1 cup white wine (or chicken broth with vinegar)
  • 4 tablespoons butter (or olive oil)
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup freshly grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 cup rice (long-grain or jasmine)
  • Salt and pepper to taste

Instructions

  1. Prepare the rice by cooking according to the package instructions with a pinch of salt.
  2. Cook the chicken in a skillet over medium heat with 2 tablespoons of butter, seasoning with salt and pepper until golden and cooked through, about 5-7 minutes.
  3. Remove the chicken and set aside.
  4. Sauté garlic and mushrooms in the same skillet with more butter until mushrooms are tender, about 3-4 minutes.
  5. De-glaze the skillet with white wine, scraping the bottom to release browned bits and simmer for a couple of minutes.
  6. Combine the chicken back in with parsley and Parmesan, stirring until melted.
  7. Serve over garlic Parmesan rice, topped with extra cheese and parsley.

Notes

Use fresh ingredients for the best flavor. Monitor garlic closely to avoid burning.
