Ingredients
- 1 lb boneless, skinless chicken breasts or thighs
- 4 cloves fresh garlic, minced
- 1 cup white wine (or chicken broth with vinegar)
- 4 tablespoons butter (or olive oil)
- 8 oz cremini or button mushrooms, sliced
- 1 cup freshly grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1 cup rice (long-grain or jasmine)
- Salt and pepper to taste
Instructions
- Prepare the rice by cooking according to the package instructions with a pinch of salt.
- Cook the chicken in a skillet over medium heat with 2 tablespoons of butter, seasoning with salt and pepper until golden and cooked through, about 5-7 minutes.
- Remove the chicken and set aside.
- Sauté garlic and mushrooms in the same skillet with more butter until mushrooms are tender, about 3-4 minutes.
- De-glaze the skillet with white wine, scraping the bottom to release browned bits and simmer for a couple of minutes.
- Combine the chicken back in with parsley and Parmesan, stirring until melted.
- Serve over garlic Parmesan rice, topped with extra cheese and parsley.
Notes
Use fresh ingredients for the best flavor. Monitor garlic closely to avoid burning.
