- Wood chips (applewood or hickory)
- 2 tbsp olive oil or butter

Instructions
- Prep the chicken: Rinse the chicken under cold water and pat it dry.
- Apply the rub: Mix dry rub ingredients in a bowl, loosen skin, and rub mixture onto the meat.
- Preheat your smoker: Set to 225°F to 250°F.
- Smoke the chicken: Place chicken on the smoker grate and smoke for 4-5 hours.
- Rest before carving: Let the chicken rest for 15-20 minutes.
- Serve and enjoy: Carve and serve with your favorite sides.
