Ingredients
- 8 oz fettuccine or penne pasta
- 1 lb boneless chicken thighs
- 4 cloves fresh garlic, minced
- 3 tbsp olive oil
- 1 cup freshly grated Parmesan cheese
- 1 cup fresh parsley or basil, chopped
- 1 cup sautéed mushrooms or spinach (optional)
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant, about 30 seconds.
- Add seasoned chicken to the skillet and cook until golden brown, about 5-7 minutes per side.
- Incorporate any optional vegetables and sauté for an additional 2-3 minutes.
- Combine the cooked pasta with the chicken and veggies, folding them together.
- Finish by adding grated Parmesan, toss until melted. Add pasta water if necessary for consistency.
- Garnish with fresh herbs and season with salt and pepper to taste. Serve immediately.
Notes
For a vegetarian option, substitute chicken with sautéed mushrooms or chickpeas.
