Ingredients

  • 8 oz fettuccine or penne pasta
  • 1 lb boneless chicken thighs
  • 4 cloves fresh garlic, minced
  • 3 tbsp olive oil
  • 1 cup freshly grated Parmesan cheese
  • 1 cup fresh parsley or basil, chopped
  • 1 cup sautéed mushrooms or spinach (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant, about 30 seconds.
  3. Add seasoned chicken to the skillet and cook until golden brown, about 5-7 minutes per side.
  4. Incorporate any optional vegetables and sauté for an additional 2-3 minutes.
  5. Combine the cooked pasta with the chicken and veggies, folding them together.
  6. Finish by adding grated Parmesan, toss until melted. Add pasta water if necessary for consistency.
  7. Garnish with fresh herbs and season with salt and pepper to taste. Serve immediately.

For a vegetarian option, substitute chicken with sautéed mushrooms or chickpeas.
