Ingredients
- 2 cups frozen or fresh corn
- 8 oz cream cheese, softened
- 1 cup cheddar cheese, shredded
- 2 jalapeños, diced
- 1 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cumin
Instructions
- Preheat your oven to 350°F (175°C).
- Combine softened cream cheese, sour cream, and shredded cheddar cheese until smooth in a large mixing bowl.
- Fold in corn, jalapeños, and diced cilantro.
- Season with garlic powder, onion powder, cumin, and lime juice.
- Transfer the mixture to a greased baking dish and smooth the top.
- Bake in the oven for about 25-30 minutes or until bubbling and golden on top.
- Remove from the oven and let it cool slightly before serving with tortilla chips.
Notes
For a crunchy topping, sprinkle extra cheese or crushed tortilla chips on top before baking.
