Ingredients
- 8 oz flat rice noodles
- 1 cup protein (chicken, shrimp, or tofu)
- 2 tbsp tamarind paste
- 2 tbsp fish sauce
- 1 tbsp sugar
- 2 eggs
- 1/2 cup crushed peanuts
- 1 cup bean sprouts
- 1/4 cup sliced scallions
- 2 cloves garlic, minced
- Oil for cooking
Instructions
- Prep the ingredients: Soak rice noodles in warm water for 30 minutes, then drain.
- Create the sauce by mixing tamarind paste, fish sauce, and sugar in a bowl.
- Cook the protein in a hot skillet with oil until caramelized, then set aside.
- Sauté the garlic until fragrant in the same skillet.
- Stir-fry the drained noodles with the sauce until well-coated.
- Add the eggs and scramble in the skillet.
- Finish by mixing in the cooked protein, veggies, and peanuts.
- Serve topped with more peanuts, bean sprouts, scallions, and a squeeze of lime.
