Ingredients

  • 8 oz flat rice noodles
  • 1 cup protein (chicken, shrimp, or tofu)
  • 2 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 2 eggs
  • 1/2 cup crushed peanuts
  • 1 cup bean sprouts
  • 1/4 cup sliced scallions
  • 2 cloves garlic, minced
  • Oil for cooking

Instructions

  1. Prep the ingredients: Soak rice noodles in warm water for 30 minutes, then drain.
  2. Create the sauce by mixing tamarind paste, fish sauce, and sugar in a bowl.
  3. Cook the protein in a hot skillet with oil until caramelized, then set aside.
  4. Sauté the garlic until fragrant in the same skillet.
  5. Stir-fry the drained noodles with the sauce until well-coated.
  6. Add the eggs and scramble in the skillet.
  7. Finish by mixing in the cooked protein, veggies, and peanuts.
  8. Serve topped with more peanuts, bean sprouts, scallions, and a squeeze of lime.
