- 2 cups fresh corn (or frozen/canned)
- 8 oz cream cheese, softened
- 1/2 cup sour cream or Greek yogurt
- 1-2 jalapeños, finely chopped (optional)
- 2 tbsp lime juice
- 1 cup cheddar cheese, grated
- 1/4 cup fresh cilantro, chopped
- 2 green onions, sliced
Instructions
- Prep your corn by husking it and slicing the kernels from the cob.
- Heat a skillet over medium heat, adding a little olive oil, and sauté the corn for about 5-7 minutes until golden.
- Combine cream cheese, sour cream, lime juice, and seasoning in a mixing bowl, blending until creamy.
- Fold in the sautéed corn, jalapeños, cheddar cheese, and cilantro until just mixed.
- Transfer the mixture to a serving bowl, topping with extra cheese and cilantro.
- Chill in the fridge for at least one hour before serving.
- Serve with tortilla chips or fresh veggies.
Notes
