Ingredients

  • 1 cup cheddar cheese, grated
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, sliced

Instructions

  1. Prep your corn by husking it and slicing the kernels from the cob.
  2. Heat a skillet over medium heat, adding a little olive oil, and sauté the corn for about 5-7 minutes until golden.
  3. Combine cream cheese, sour cream, lime juice, and seasoning in a mixing bowl, blending until creamy.
  4. Fold in the sautéed corn, jalapeños, cheddar cheese, and cilantro until just mixed.
  5. Transfer the mixture to a serving bowl, topping with extra cheese and cilantro.
  6. Chill in the fridge for at least one hour before serving.
  7. Serve with tortilla chips or fresh veggies.
