- 1 inch ginger, grated
- 1 cup bell peppers, sliced
- 1 cup cucumber, sliced
- 1 cup carrots, shredded
- 1 cup lettuce or cabbage
- 1 lime, juiced
- Red chili flakes or Sriracha (to taste)
- Fresh cilantro or green onions (for garnish)
Instructions
- Prepare the chicken: Sauté in a skillet over medium heat with a splash of oil until golden brown, about 5-7 minutes.
- Make the peanut sauce: Whisk together peanut butter, soy sauce, garlic, ginger, and lime juice; adjust thickness with warm water if necessary.
- Assemble the wraps: Lay out a large lettuce leaf or tortilla, add sautéed chicken, fresh veggies, and drizzle with peanut sauce.
- Roll them up: Tuck in sides and roll like a burrito.
- Slice and serve: Cut in half diagonally and serve with extra peanut sauce on the side.
Notes
