Delightful Thai Peanut Chicken Wraps filled with sautéed chicken, fresh vegetables, and a creamy peanut sauce.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup bell peppers, sliced
  • 1 cup cucumber, sliced
  • 1 cup carrots, shredded
  • 1 cup lettuce or cabbage
  • 1 lime, juiced
  • Red chili flakes or Sriracha (to taste)
  • Fresh cilantro or green onions (for garnish)

Instructions

  1. Prepare the chicken: Sauté in a skillet over medium heat with a splash of oil until golden brown, about 5-7 minutes.
  2. Make the peanut sauce: Whisk together peanut butter, soy sauce, garlic, ginger, and lime juice; adjust thickness with warm water if necessary.
  3. Assemble the wraps: Lay out a large lettuce leaf or tortilla, add sautéed chicken, fresh veggies, and drizzle with peanut sauce.
  4. Roll them up: Tuck in sides and roll like a burrito.
  5. Slice and serve: Cut in half diagonally and serve with extra peanut sauce on the side.

Notes

Marinate chicken for added flavor. Avoid overfilling the wraps to prevent tearing.
