Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1/4 cup honey
  • 1/4 cup freshly squeezed lime juice
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tbsp olive oil
  • Fresh herbs (cilantro or parsley), for garnish

Instructions

  1. Prepare the marinade: In a bowl, whisk together honey, lime juice, minced garlic, and a splash of olive oil.
  2. Marinate the chicken: Place your chicken in a zip-top bag or shallow dish and pour the marinade over it. Let it soak for at least 30 minutes.
