Ingredients
- 1 lb boneless chicken (breast or thighs)
- 1/4 cup honey
- 1/4 cup freshly squeezed lime juice
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 tbsp olive oil
- Fresh herbs (cilantro or parsley), for garnish
Instructions
- Prepare the marinade: In a bowl, whisk together honey, lime juice, minced garlic, and a splash of olive oil.
- Marinate the chicken: Place your chicken in a zip-top bag or shallow dish and pour the marinade over it. Let it soak for at least 30 minutes.
- Sauté the mushrooms and vegetables: Heat a skillet on medium-high heat, adding olive oil. Toss in sliced mushrooms and any chosen vegetables.
- Cook the chicken: Remove the chicken from the marinade and place it in the same skillet. Cook on each side until golden brown, roughly 6-8 minutes per side.
- Assemble the stack: Layer the cooked chicken, sautéed mushrooms, and other veggies. Top with fresh herbs.
- Serve and enjoy: Ladle any reserved marinade over the stack and enjoy with your favorite sides.
Notes
For a lighter version, swap chicken for shrimp or tofu. Use agave syrup instead of honey for a vegan option.
