- 2 cups fresh strawberries, chopped
- 2 1/2 cups all-purpose flour
- 2 cups granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup whole milk or buttermilk
- 2 teaspoons vanilla extract
- 1 cup cream cheese, softened
- 2 cups confectioners’ sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your pans by greasing and flouring round cake pans or lining them with parchment paper.
- Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, and salt.
- Cream the butter and sugar in another bowl until light and fluffy.
- Incorporate the eggs one at a time, beating well after each addition.
- Add the vanilla extract and milk, mixing until combined.
- Combine the dry ingredients with the wet ingredients, folding gently.
- Fold in the strawberries, reserving a few for decoration.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes before transferring to wire racks.
- Prepare the frosting by beating together cream cheese, butter, and confectioners’ sugar until smooth. Add vanilla and milk to achieve desired consistency.
- Assemble by spreading frosting between layers and on top of the cake, then decorate with reserved strawberries.
- Slice and serve to enjoy with loved ones!
Notes
For a lighter option, substitute half of the all-purpose flour with almond flour. Ensure strawberries are in season for the best flavor.
