- Shrimp (peeled and deveined)
- Asparagus spears, trimmed
- Mushrooms (shiitake or button), sliced
- Garlic, minced
- Soy sauce (light or low-sodium)
- Olive oil or sesame oil
- Fresh herbs (cilantro or basil) for garnish
Instructions
- Prep your ingredients: Wash and trim the asparagus, slice the mushrooms, and mince the garlic.
- Heat your pan: In a large skillet or wok, heat 1-2 tablespoons of oil over medium-high heat.
- Cook the shrimp: Add the shrimp to the pan and sauté for about 2-3 minutes until pink and opaque. Remove and set aside.
- Stir-fry the vegetables: In the same pan, add oil if needed, then toss in garlic, mushrooms, and asparagus. Stir-fry for 4-5 minutes.
- Combine and flavor: Return the shrimp to the pan and pour in the soy sauce. Toss to coat.
- Garnish and serve: Top with fresh herbs just before serving, and enjoy it hot over rice or on its own.
