Ingredients
- 1 loaf of brioche or challah, cut into 1-inch cubes
- 1 cup pumpkin puree
- 6 large eggs
- 2 cups whole milk or heavy cream
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Powdered sugar for dusting
Instructions
- Prepare the casserole dish by buttering a 9×13 inch baking dish.
- Layer the bread cubes evenly in the dish.
- Mix together eggs, pumpkin puree, milk or cream, maple syrup, vanilla extract, and spices in a bowl.
- Combine the custard mixture with the bread cubes, pressing down gently.
- Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Bake at 350°F (175°C) for 45 minutes until golden brown and set.
- Serve with powdered sugar and maple syrup on top.
Notes
Allow casserole to cool slightly before serving. Leftovers can be stored in the fridge for up to three days.
