Ingredients

  • 1 loaf of brioche or challah, cut into 1-inch cubes
  • 1 cup pumpkin puree
  • 6 large eggs
  • 2 cups whole milk or heavy cream
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Powdered sugar for dusting

Instructions

  1. Prepare the casserole dish by buttering a 9×13 inch baking dish.
  2. Layer the bread cubes evenly in the dish.
  3. Mix together eggs, pumpkin puree, milk or cream, maple syrup, vanilla extract, and spices in a bowl.
  4. Combine the custard mixture with the bread cubes, pressing down gently.
  5. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  6. Bake at 350°F (175°C) for 45 minutes until golden brown and set.
  7. Serve with powdered sugar and maple syrup on top.

Notes

Allow casserole to cool slightly before serving. Leftovers can be stored in the fridge for up to three days.
