Ingredients

  • 1 tablespoon olive oil
  • 1 medium red onion, thinly sliced
  • 2 cups fresh spinach
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup feta cheese, crumbled
  • 4 large tortillas (flour or corn)
  • Salt and pepper to taste

Instructions

  1. Sauté the onions in olive oil over medium heat until caramelized, about 5-7 minutes.
  2. Add the fresh spinach and cook until wilted, then season with salt and pepper.
  3. Spread mozzarella on half of each tortilla, then top with the sautéed mixture and feta.
  4. Fold tortillas in half and cook in a skillet until golden brown and cheese is melted, about 3-4 minutes per side.
  5. Serve with Greek yogurt or tzatziki on the side.
