Ingredients
- 1 tablespoon olive oil
- 1 medium red onion, thinly sliced
- 2 cups fresh spinach
- 1 cup mozzarella cheese, shredded
- 1/2 cup feta cheese, crumbled
- 4 large tortillas (flour or corn)
- Salt and pepper to taste
Instructions
- Sauté the onions in olive oil over medium heat until caramelized, about 5-7 minutes.
- Add the fresh spinach and cook until wilted, then season with salt and pepper.
- Spread mozzarella on half of each tortilla, then top with the sautéed mixture and feta.
- Fold tortillas in half and cook in a skillet until golden brown and cheese is melted, about 3-4 minutes per side.
- Serve with Greek yogurt or tzatziki on the side.
Notes
For a twist, add grilled chicken or shrimp for a heartier meal.
