Instructions
- Prep your ingredients. If using fresh lychee, peel the fruit and remove the seeds.
- Blend the lychee flesh, lime juice, and simple syrup until smooth.
- Heat 1 cup of water in a saucepan until just boiling. Remove from heat.
- Sprinkle the gelatin over the warm water, stirring until dissolved.
- Combine the lychee puree with the gelatin mixture and vodka in a mixing bowl; stir well.
- Pour the mixture into small cups or molds to set.
- Refrigerate for at least 4 hours until fully set.
