Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup cold unsalted butter (or coconut oil)
  • 1/4 cup lemon juice
  • 2 tablespoons lemon zest
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients in a large bowl: oats, flour, brown sugar, baking powder, and salt.
  3. Combine wet ingredients in another bowl: melted butter, lemon juice, zest, and egg.

  5. Portion out 1 cup of the mixture for the topping and press the rest into a greased 9×9 inch baking dish.
  6. Bake the base for about 15 minutes until golden.
  7. Prepare a lemon filling with additional lemon juice, sugar, and cornstarch.
  8. Add the lemon filling over the baked base.
  9. Top with the reserved crumble mixture.
  10. Bake again for 20-25 minutes until the topping is golden brown.
  11. Cool completely before slicing.
