Ingredients
- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1 cup brown sugar
- 1/2 cup cold unsalted butter (or coconut oil)
- 1/4 cup lemon juice
- 2 tablespoons lemon zest
- 1 egg
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mix dry ingredients in a large bowl: oats, flour, brown sugar, baking powder, and salt.
- Combine wet ingredients in another bowl: melted butter, lemon juice, zest, and egg.
- Combine the wet mixture with the dry ingredients until just mixed.
- Portion out 1 cup of the mixture for the topping and press the rest into a greased 9×9 inch baking dish.
- Bake the base for about 15 minutes until golden.
- Prepare a lemon filling with additional lemon juice, sugar, and cornstarch.
- Add the lemon filling over the baked base.
- Top with the reserved crumble mixture.
- Bake again for 20-25 minutes until the topping is golden brown.
- Cool completely before slicing.
Notes
For best results, let the bars cool overnight to enhance flavor and texture.
